Tandoori Chicken Wraps
This meal is incredible for multiple reasons: It’s easy to make, can be enjoyed on the go, and is highly customizable! I was first introduced to tandoori at The Globe, a tavern and bar in downtown Athens, GA! I ordered the tandoori chicken sandwich and was blown away at how simple, and satisfying it was. Immediately after I had to find the spice for myself. It's important to know that tandoori originates in the Punjab region of India.
There, the chicken is also seasoned with the spice blend made from scratch and yogurt, then roasted in a tandoor that can reach almost 900°F! This recipe won't get that in-depth for you, thankfully. A grill pan, charcoal or gas grill will give you the flavor profile you desire. These wraps are perfect for a quick lunch, game day, or for a light dinner.
Ingredients:
1lb of boneless skinless chicken breasts
1/4c tandoori powder
1 6oz cup greek yogurt (plain)
4 12 inch wraps. (Wheat or spinach)
4oz arugula
1 fresh tomato
1 cucumber
2tsp red wine vinegar
peanut or olive oil
kosher salt
black pepper
white cheddar (optional)
caesar dressing (for dipping)
Recipe:
- First combine the tandoori powder and greek yogurt to create a marinade for your chicken breast. Allow the chicken to marinate for at least one hour and no more than six.
- While you’re marinating the chicken, preheat your grill, or grill pan following normal procedures. Once you’re done marinating, grill the chicken breasts over medium heat until the breasts' juices run clear. About 5 minutes per side. When done, remove the chicken from the grill and let cool covered in foil.
- Next, thinly slice your tomato and cucumber. Toss the tomatoes and cucumber together with red wine vinegar and a dash of olive or peanut oil. Set aside.
- Wash your arugula and pat dry with paper towel. Toss with a dash of peanut or olive oil. Season with kosher salt and pepper, set aside.
- Right before wrapping, shred your chicken and slice the white cheddar thinly.
- Lay one of your wraps down flat. Then layer it with chicken (sliced/shredded), white cheddar, arugula, tomato, and cucumber. Make sure you tuck all sides in as you roll and cut the wrap at a diagonal angle for a nice presentation touch.
- Finally, serve the wraps chilled with caesar dressing for dipping. NOTE: As previously stated, this dish is highly customizable so feel free to experiment with other components for your wrap. Tomatoes, cucumbers, and arugula are fine additions, but avocados and other seasonal veggies work as well.
