Blood Orange Kale Salad
Kale is the most cost effective, versatile green on the market, period. I took one bunch and transformed it into a flavorful salad here that allows you to get acclimated with constructing your own vinaigrette! Blood oranges are stunning in person and pair well with the kale. If you can't get your hands on blood oranges, navel oranges or any other sweet citrus will do just fine. Make sure to wash your kale off with gently running water before starting the recipe.
Ingredients:
1/2 bunch of kale (stems removed, chopped)
1/4c cilantro
2 blood oranges
2 tbsp honey or 1 tbsp sugar
1 1/2 tsp pure sesame oil
1/4c peanut oil
1 tsp white wine vinegar
Kosher salt to taste
Recipe:
- Zest half an orange with a microplane grater, then slice the orange and squeeze the juice into a bowl. Remove any seeds.
- Peel the other orange to the flesh with a paring knife making sure not to remove too much of the flesh. Cut the orange into sections, removing the membrane encasing the fruit. Set aside
- Next, combine the zest, blood orange juice, honey, sesame oil and vinegar with a whisk stirring vigorously.
- Drizzle your peanut oil into the mixture while continuing to whisk vigorously until an emulsion is formed. Taste and season with kosher salt to taste.
- Massage your kale with the vinaigrette to soften the leaves. Toss cilantro with the salad. Garnish with blood orange sections and your favorite nuts, serve immediately.
